Ingredients: Salmon:
1–2 lbs. fresh salmon 2 tablespoons brown sugar 2 teaspoons smoked paprika 2 teaspoons onion powder 1 teaspoon garlic powder 1/2 teaspoon chili powder 1/2 teaspoon kosher salt (more for a larger filet) 2 tablespoons olive oil
Mango Avocado Salsa:
2 mangoes, diced 1 avocado, diced 1/4 cup minced cilantro 1/4 cup minced red onion minced jalapeño (optional, to taste) a drizzle of honey a squeeze of lime juice + a little lime zest salt to taste

Directions:1. Mix together salsa ingredients. Let sit in fridge until ready to serve. If you use enough lime juice, this salsa keeps well for a few days.
2. Mix the spices and olive ingredients together until it is a paste. Preheat the oven to 475 F if using one large filet, 425-450 F if using smaller filets.
3. Grease a baking dish or sheet pan. Place salmon skin side down (if there is skin) and rub the paste liberally on the top of each piece of salmon. Bake for 6-15 minutes depending on the size of the salmon and how rare you would like it. Aim for 145 F internal temperature.
4. Serve salmon over rice with generous helpings of salsa. (I like to make brown rice cooked with broth and a few Tbs of sesame oil. It's delicious with this.) |
