16 oz. Crab Meat ( all lump or the most expensive is the best)
2 Stalks of Celery (diced)
Parsley
1 Large Egg
3 tbsp. of Mayonnaise
1 tsp. of Worcestershire Sauce
Salt and Pepper
Old Bay Seasoning
1 tsp. of mustard
1 lemon
1/2 cup of Breadcrumbs or Cracker Crumbs
Parsley
Flour with salt
Eggs
Canola Oil

Directions:
Directions:
Saute the celery in butter a small sauce pan and cook for 10 minutes. In another bowl add the eggs, mayonnaise, worcestershire. mustard, salt, pepper, old bay, lemon rind and juice from 1/2 of the lemon and the parsley. Gently mix the sauce into the crab meat along with the breadcrumbs or cracker crumbs . Form into 2 inch round balls and bread with the salt and flour mixture. You can saute the crab cakes as is in butter and oil or dip again in eggs and breadcrumbs and fry crab cakes at 375º in canola oil.
