4 tbsp. of Olive Oil
2 Pounds of Ground Beef (80/20)
1 Pound of Beef, Veal and Pork Mix
3/4 Cup of Vidalia Onions (diced)
1/2 Cup of Carrots (diced)
4 Cloves of Garlic
1/4 Cup of Celery (diced
1 1/2 Cups of Sweat Red Wine
2 Cans of Tomato Paste
2 Cans of Plum tomatoes (Marzano)
Salt & Pepper
Rind of the Parmesan and Romano Cheese
Oregano
Fennel Seeds

Directions:
In a large stock pot add olive oil and all the meat to the pot. Brown the meat and breakdown into small pieces. Add the onions, fennel, garlic, celery and carrots to the pot. Continue to cook until vegetables are soft of medium heat. Add wine to mixture and let cook for 10 minutes. Add tomato paste along with a can of water for each. Add salt and oregano. Puree the whole tomatoes and add to sauce. Add the rinds and pepper and salt and continue to cook sauce for 1 to 2 hours.
Serve with rigatoni or a pasta that has groves.
