2-3 lbs. chicken
salt to taste
1 egg, slightly beaten
⅓ cup frozen pineapple orange juice thawed
⅔ cup bread crumbs
⅔ coconut flakes
¼ tsp. curry powder
¼ cup of margarine melted

Directions:
Directions:
Mix egg and juice concentrate. Mix crumbs, coconut and curry powder. Dip chicken pieces into juice mixture, then into crumb mixture. Place chicken in a shallow baking pan, skin side up. Drizzle melted butter over top, cover and bake at 350º for 30 minutes. Remove cover and bake 30 minutes longer or until brown and tender.
