5 lbs. potatoes
1 bag bread
1/4 lb. butter
Crisco, stick
2 c. onions, chopped
2 c. celery, chopped
5 eggs
salt & pepper to taste
¼ c. parsley

Directions:
Directions:
Preheat oven to 350ºF. Wash, peel and cook potatoes; do not overcook. Toast bread in toaster. Melt butter and Crisco in frying pan over medium heat. Add onions and celery; cook until lightly browned. Set aside. Mash potatoes by hand; it can be slightly lumpy. Add eggs, salt, pepper and enough milk for appropriate consistently. Tear bread in pieces and add to potato mixture. Add onions, celery and parsley. Top with a little butter. Bake for 1 hour or until heated thoroughly.
