Pie Filling:

3 eggs
1-1/2 cups sugar
1/2 cup melted butter
1 teaspoon vanilla
1 cup (1/2 pound) coconut
1 cup crushed pineapple

Crust (if homemade):

1 cup flour
1/3 cup shortening
3 Tablespoons ice water
Dash of salt

Pie Filling:

Slightly beat 3 eggs in mixing bowl. Add sugar, melted butter, vanilla, and coconut OR crushed pineapple [or a combination of both.]. Pour filling into an 8" or 9" unbaked pie shell and place in preheated 350º oven. Cook about 45 minutes or until done.
