2 cups flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1½ cups oil
3 cups grated carrots
1 cup chopped nuts
1 cup white raisins
1 cup dates
6 eggs ( large or extra large)

Directions:
Directions:
Preheat oven to 350 º
Grease a deep bundt style pan and set aside.
Sift flour, sugar, baking soda, salt together. Add eggs and oil and blend for 2 minutes on medium speed.
Stir in carrots, nuts, dates and raisins. Pour mixture into prepared pan and bake at 350 º for 1 hour or until done.
 

Cream Cheese Icing

1 stick of butter
1 - 8 oz cream cheese
1 box of confectionery sugar
2 teaspoons vanilla

Directions:

Cream butter in mixer until softened, add vanilla. Add confectionery sugar until the icing reaches the desired spreadable consistency.

Nana was given this recipe from her good friend Julie Gonzales, from St. Raphael's Church in Kittery, Maine.
It is a deliciously moist carrot cake recipe that Nana made on a regular basis. She has it marked in her recipe book as a favorite!
