2 cups whole raw almonds
1/4 cup butter
1 T seasoned salt
2 t white sugar
1/2 t onion powder

Melt butter in skillet, add almonds and stir.
Remove from heat and cover.
Stir a bit every minute or so for 10 min.
Place salt, sugar, and onion powder in a spice grinder or blender and pulverize until it becomes a fine powder. The finer the dry ingredients, the better they will stick to the almonds.

Dump the almonds in a colander and strain off the melted butter.
Spread them out in a baking sheet and coat with the salt mixture. (Use a pan that will fit in your smoker. I use a pizza pan).
Smoke at about 225 degrees with a light flavored wood like apple or alder until the nuts are lightly toasted. Remove and allow to cool. Store in an air tight container. This smoked almond recipe makes about 2 cups, which can go pretty fast. Better make a double recipe.
