Ingredients:
Ingredients:
Dozen eggs
1/2 jar of pickle relish
Mayonnaise
Salt and pepper

Directions:
Directions:
Boil eggs for 10 minutes or more. Drain off the hot water, add cold water, and let them sit until they’re cool (this makes them peel more easily). Remove shells.
Cut eggs in half length-wise and remove all yolks to a dish large enough to make the mixing easier. To the yolks add: pickle relish (I use Mount Olive and never measure. If I have a dozen eggs, I use at least half a jar of the relish); salt and pepper; Hellman’s Mayo (Add a little at a time to get the right consistency for stuffing—not too runny and not too stiff.) Stuff eggs and enjoy.

Personal Notes:
I always have enough egg stuffing for a couple of egg salad sandwiches. --Nini
