For each tbsp butter, you will need 1 tbsp all-purpose flour and ½ cup milk.

Brown sausage in large, deep frying pan, set aside, and pour off grease. In same pan, melt the butter, add the flour to the pan, and mix well. Add the milk a little at a time, stirring constantly, so the mixture will be smooth (Without the stirring, it will get lumpy). Add cooked sausage to gravy. You may find that you need to add more milk if it’s too thick and if it sits too long before you use it—it will get thicker. Salt and pepper to taste.

I usually use ½ to 1 stick of butter when we get together for Christmas. Any that’s left over can be refrigerated and reheated “tomorrow.” I use Pillsbury frozen biscuits in the bag – Southern Style, Flaky, or Buttermilk. --Nini
