Cabbage Tomato Scallop Recipe

3 cups cornflakes
1 cup grated cheddar
4 cups shredded cabbage - boiled until tender
3 tbsp butter
1/2 cup chopped onion
3 tbsp flour
1 tsp salt
1/8 tsp pepper
2 1/2 cups cooked tomatoes
1/2 cup green peppers

Mix shredded cheese and cornflakes and set aside.

In saucepan heat butter and chopped onion. Cook until onion is soft. Blend in flour salt and pepper.
Heat until mixture bubbles. Stir in tomatoes and green peppers. Cook until thickened.

Pour 1/3 of the tomato mixture into a casserole dish. Top with half of the cabbage. Repeat ending with tomato layer.
Top with cheese/cornflake mixture.
Bake @ 375 for 25 minutes
