1 1/2 cups half & half cream
1 1/2 cups coconut milk
2 eggs
3/4 cup sugar
1/3 cup cornstarch
1/4 tsp salt
1 cup flaked coconut-toasted
1 tsp coconut extract
1 9" pie shell
Whipping Cream for top of pie

Directions:
Directions:
Combine half & half, coconut milk, eggs, sugar, cornstarch and salt. Bring to a boil over low heat (double boiler works good) whisking constantly.
When it starts to boil and thicken remove from heat and add 3/4 cup coconut and coconut extract.
Pour into cooked pie shell. Chill for 2-4 hours.
Top with whipped cream.
