½ cup butter, softened
1 cup granulated sugar
1 tsp vanilla extract
1 whole egg
2 eggs, separated
1 ½ cups flour
1 tsp baking soda
½ tsp salt
1 cup mini marshmallows
1 cup semi-sweet chocolate chips
1 cup light brown sugar, packed

Directions:

Preheat oven to 350º. Grease a 9x13" pan. In a large bowl cream butter, sugar, 1 whole egg, 2 egg yolks, and vanilla extract until smooth. Add flour, baking powder, and salt, mix until just combined and spread into prepared pan. Top with chocolate chips and marshmallows. In a clean bowl of mixer whisk 2 remaining egg whites until stiff peaks form, about 2 minutes. Fold in light brown sugar and stir until combined and there are no lumps. Spread mixture on top of marshmallows. Bake 30-35 minutes, or until top is golden brown. Cool completely before cutting into squares. Store in an airtight container for up to 3 days.
