Ingredients:  
Ingredients:  
1 lb andouille sausage
Tasso smoked meat
1 1/2 sticks butter
1 1/2 c flour
or get ready made roux
3 boxes of stock (12 cups)
frozen okra pieces
chopped onion
2-3 stalks of celery
chopped green peppers
frozen corn
Add extra meat (chicken, turkey, shrimp)
2 tsp gumbo file
3 Tbsp Emeril's Bayou Blast
1 Tbsp paprika or smoked paprika
2 Tbsp brown sugar
2 bay leaves
Salt and Pepper to taste

Directions:
Brown sausage in large soup pot and put in bowl. If making roux, add butter and flour. Stir constantly over medium heat until roux is chocolate brown and smells like caramel. Stir in stock and add all ingredients. Bring to a boil and simmer.
