15oz whole milk ricotta
1 tsp salt
1 large orange
small bunch sage
12oz cranberries
3⁄4 cup sugar
1⁄3 cup brown sugar
1 french baguette
3 tbsp olive oil

Directions:
Directions:
Add ricotta and 3/4 tsp salt to medium bowl, stir well.
Zest dark outer layer of orange to make 2 tsp. Add to ricotta.
Mince sage to make 1 tbsp. Add to ricotta. Stir well and refrigerate.
Slice orange in half and squeeze juice in small pot.
Add cranberries, sugar, brown sugar, and 1/4 tsp salt. Stir to combine.
Cook over medium heat until berries burst, 20-25 minutes. Set aside and cool 15 minutes.
Preheat oven to 400. Slice bread in 1/2 inch thick slices. Set on baking sheets.
Coat bread with oil and bake 6-8 minutes.
Spread ricotta on toast and top with jam.
