1 box spice cake mix
1 can (15 oz.) pumpkin puree

Preheat oven to 400º. Line mini muffin tins with foil cups or lightly coat with cooking spray.

In a large bowl, mix puree & cake mix together. Mixture will be really thick. Divide batter evenly among muffin tins.

Bake 10-12 minutes, or until toothpick inserted in the center comes out clean. Remove & place on wire racks to cool.

NOTE: If you don't have a spice cake mix, you can use a yellow or vanilla mix and add 1 TBSP pumpkin spice.
Great with cream cheese frosting on top, but you have to add more points!
