2 cups cooked quinoa
1 cup packed fresh, chopped cilantro
1/4 cup red wine vnegar
2 teaspoons coconut aminos
1/4 cup chopped onion
Juice of 1-2 lemons
2 garlic cloves, minced
Ground pepper

Directions:
Directions:
Whisk vinegar, aminos, lemon juice, garlic, and pepper in a medium bowl. Add in quinoa and onion and stir. Fold in the cilantro. Cover and chill for a least 30 min.
