1 lb pork, cut in ½" cubes
2 T shortening
1 C water
½ tsp salt
1 C sliced celery
1 C sliced onion
1 (6 oz) can sliced mushrooms, undrained
¼ C soy sauce
3 T cornstarch
1 (16 oz) can of bean sprouts, drained
4 C hot cooked rice

Directions:
Directions:
1. Brown meat slowly in hot shortening in 4 quart pan. Add water, salt and pepper. Cover and simmer until meat is tender. Add celery and onion; cook a little longer. Add mushrooms with liquid.

2. Mix soy sauce and cornstarch; slowly stir into hot liquid. Cook and stir until thick and bubbly. Add bean sprouts.
Serve over rice.

Mom made this often. When I make it I add sugar snap peas, water chestnuts, carrots, bamboo shoots and baby corn. Add any, or all of these ingredients. Sometimes I add some Sherry or ginger root.
