3 lbs boneless skinless chicken breast
cup olive oil
1 clove garlic, minced
2 green onions, finely chopped
3 tbsp parsley, chopped
salt and pepper to taste
2 cups bread crumbs
6 skewers
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
Wine Sauce:
3 tbsp butter
3 tbsp flour
2 cups water
1 tsp granulated chicken bouillon
cup white wine
cup lemon juice

Directions:

Cut breasts into cubes, mix with the next 5 ingredients and let marinade for 1 hour. Drain off excess oil, toss with bread crumbs, divided into 6 portions and skewer, broil or grill. Hollow out peppers, rinse and let dry, slice into thin strips. Melt butter in heavy saucepan, whisk in flour until smooth. Cook briefly while stirring. Add water and chicken bouillon, as sauce thickens, add wine and lemon juice. Remove from heat and let sit, stirring occasionally . When ready to serve, add peppers to grill until edges begin to burn, Take chicken and peppers from grill. Remove chicken from skewers and place on separate plates and top with peppers. Generously ladle sauce over each dish and serve.
