Diced Ham

For Cheese Sauce:
2 Tbsp. Butter
2 Tbsp. Flour
1/4 tsp. Salt
1 C. Milk
1/4 Box Velveeta Cheese

Peel and thinly slice enough potatoes to fill your casserole dish almost full. Keep potatoes in cold water until ready to add other ingredients.

Dice ham into bite size chunks or 1 package ham chunks.

Layer 1/2 potatoes into casserole dish. Add all of the ham on potatoes. Add rest of potatoes to cover the ham.

Pour medium cheese sauce over top. Cover dish. Bake in a 350 oven for about 1 hour or until potatoes are tender.

Cheese Sauce: Melt butter in sauce pan. Blend in flour and salt. Add milk and stir constantly until thick. Dice up 1/4 box Velveeta cheese and to sauce. When cheese has melted melted pour over potatoes. I always make a double batch but it depends on how much potatoes you use.
