2 eggs, beaten
½ cup avocado oil
2 cups sugar
4 cups Granny Smith apples, chopped
1 tsp vanilla extract
2 cups flour
2 tsp baking soda
2 tsp cinnamon
½ tsp salt
½ cup walnuts or pecans, chopped

Directions:
Directions:
Preheat oven to 350º. Beat eggs, oil, and sugar until creamy. Stir in apples, add vanilla extract. In a separate bowl mix together flour, baking soda, cinnamon, salt. Stir flour mixture into apple mixture until just moist, do not over beat. Gently fold in nuts. Grease 9x13” pan. Bake for 45 minutes.
