1 CUP YELLOW GRITS
4 CUPS WATER
PINCH SALT
1/2 CUP CHEDDAR CHEESE
2 TBSP BUTTER
1/4 CUP HEAVY CREAM

SHRIMP:
5 STRIPS BACON, CHOPPED INTO PIECES
1 LB WILD SHRIMP (21-25) PEELED AND DEVIENED
4 SCALLIONS, SLICED
1 TBSP MINCED GARLIC
FRESHLY SQUEEZED LEMON JUICE
2 DASH TABASCO

MAKE GRITS IN RICE COOKER OR IN PAN ON STOVE, MED HEAT- STIR GRITS IN BOILING WATER, ADD SALT AND COOK 20 MINUTES UNTIL WATER ABSORBED. ADD CHEESE, BUTTER AND HEAVY CREAM. KEEP WARM.
SHRIMP;
COOK BACON.
IN GREASE, COOK SHRIMP WITH SALT AND PEPPER. EACH SIDE 60-90 SECONDS.
ADD SCALLIONS, GARLIC, LEMON JUICE, TABASCO AND BACON.
SERVE IN BOWL OF GRITS WITH SHRIMP ON TOP
