Saskatoon Pie (Huckleberry Pie)

3 ½ cups Berries
½ cup water
¾ cup sugar
3 Tablespoons cornstarch
2 Teaspoons lemon juice
1 Tablespoon butter
½ teaspoon vanilla

Mix and cook all the ingredients together and put into a pie shell. Bake your pie and enjoy!

My trips to Jafre BC (by Fernie) were always eventful - like picking huckleberries up the side of a mountain and then making the best pie ever. Sitting around a campfire eating pie was the best! Saskatoons grew wild along the roads and they were easy to pick. Daisy would come with me and you could never see her only see the tall grass moving as she went exploring! Those were good times!
