2 (8oz) pkg Manicotti shells
1/2 c butter
1/4 c all purpose flour
2 1/2 c milk
3/4/ c Parmesan cheese, grated
1 lb bulk Italian sausage
4 c chicken or turkey, cooked and diced
2 (10oz) pkg frozen spinach, thawed and squeezed
2 eggs, beaten
1 c mozzarella cheese, shredded
2 (26 1/2 oz) cans spaghetti sauce
1/4 c fresh parsley, minced

Cook manicotti according to directions. Melt butter in a saucepan. Stir in flour until smooth. Gradually add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in Parmesan cheese until melted; set aside. Drain Manicotti, set aside. In skillet cook sausage over medium heat until no pink; drain Add chicken, spinach, eggs, Mozzarella cheese and 3/4 c white sauce. Stuff into shells. Spread 1/2 c of spaghetti sauce on 2 ungreased 13x9 2 inch pans. Top with stuffed manicotti. Pour the remaining spaghetti sauce over shells. Reheat remaining white sauce, stirring constantly. Pour over spaghetti sauce. Bake uncovered at 350 for 40-45 minutes. Sprinkle with parsley.
