1 cup unsweetened applesauce
3 large eggs
1 teaspoon vanilla extract
1 cup sugar
1 cup brown sugar
3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3 cups green apples, peeled, corded and chopped (shredded in food processor)

Directions:

1. Preheat oven to 300º. Lightly grease 2 bread loaf pans.
2. In a large mixing bowl whisk together applesauce, eggs, and vanilla. Whisk in sugar and brown sugar until combined.
3. Stir in flour, baking soda, salt, and cinnamon until thoroughly mixed in and then fold in apples.
4. Divide batter into the two prepared pans.
Bake in the 300º oven for 90 minutes
5. Remove pans from oven and let cool 10-15 minutes before removing the loaf from the pan. Cool completely on a wire cooling rack.
