1/2 pound of macaroni, cavat½appi, or penne pasta
4 tbsp. butter, divided
¼ cup flour
2½ cups milk
2 cups Gruyere cheese, grated-this will be in the specialty cheese area in the grocery
1 cup sharp cheddar, grated
¼ cup+ 2 tbsp. parmiagiano-reggiano cheese, grated-also in specialty cheese area-Keep the 2 tbsp. in separate bowl-this is part of the topping
½ tsp salt plus more for pasta water
¼ tsp pepper
⅛ tsp nutmeg
½ cup panko bread crumbs
½ tsp herbs de Provence

Cook pasta according to directions in salted water, drain and rinse with cold water. Melt 3 tbsp of butter over low heat, add flour and cook 2 minutes. Gradually add milk, bring to a boil, decrease heat to low and cook until thickened. Be sure to stir often so it won't burn. Add cheeses, spices, and pasta.
Melt remaining 1 tbsp butter, add panko and cook until golden brown. Stir in herbs de Provence.
Place pasta in an 8x8 baking dish and top with panko and remaining 2 tbsp Parmigiano-Reggiano cheese. Bake in a 375º oven for 30 minutes.
If you reheat this, be sure to do it in the oven. It does not microwave.

This is from the Creme de la Crumb blog once again, she has so many wonderful recipes. This mac and cheese does not dissapoint! We eat this with her best tossed green salad as a main dish but it can also be a side dish. Not the ususal mac and cheese flavor, but so, so good.
