7 cups sliced zucchini - or Normandy Vegetables
1/3 cup diced onion
2 tbsp butter, melted
2 cups crushed Ritz cracker = 2 sleeves
1 cup shredded Cheddar cheese
1 cup chicken broth
1/2 cup sour cream
1/2 tsp kosher salt
1 tbsp chopped parsley, if desired

Directions:

Grease inside of 9x13 pan with butter or cooking spray
If veggies are uncooked- cover with plastic wrap, microwave on high 7 min until tender and drain liquid.

Mix 1 sleeve of Ritz with half of the cheese, the chicken broth and sour cream and salt.
Pour over veggies gently stir to coat.

Bake at 350º 1hr. then add remaining sleeve of crushed crackers and melted butter, bake until golden

Let stand 15 min before serving
