2 tbsp. oil
1/4 onion, finely diced
1/4 red pepper, finely diced
1/4 cup frozen peas
2 cups cooked rice*
1/4 cup diced cooked chicken
2 tbsp. soy sauce
1 tsp minced garlic *optional

* substitute quinoa for rice, but gently add chili flakes and double soy sauce for flavor.

Heat oil in a frying pan over medium-high heat. Add garlic, onions and pepper and cook until begin to brown. Stir in peas. Add egg and stir until evenly distributed. Add remaining ingredients on medium heat, stirring frequently for a good five minutes. Serves 2.

I love to eat fried rice or quinoa as a meal, and so throw in whatever veggies or meat that's in the fridge/freezer I feel like eating. Broccoli, mushrooms, leftover ham or roast and especially shrimp. Add more onion and soy sauce to taste. Preparing the quinoa with beef or chicken broth rather than water also adds great flavor.
