3 tbsp. instant potato flakes
3 tbsp. sugar
1 cup warm water
1 package active dry yeast

Directions:
Directions:
Combine all ingredients in a glass container-no metal or plastic. Let sit covered 5 days, stir daily with a wooden spoon. On the morning of the 5th day, feed the starter with 3 tbsp potato flakes, 1 cup warm water, and 3 tbsp sugar. Stir and cover and let stand until evening or 6 hours. Remove 1 cup of starter (you can now make bread or discard it). Put the remaining starter in a glass jar with holes poked in the lid and put in the refrigerator. Every five days feed the starter and remove and discard 1 cup or make bread.
