½ c. butter (1 stick)
1 c. firmly packed brown sugar
1 egg
½ tsp. vanilla
2 c. flour
¾ tsp. baking powder
¾ tsp. baking soda
¼ tsp.salt
⅓ c. sour cream
1 ¾ c. cashews

Frosting
½ c. butter (1 stick)
¼ tsp. vanilla
3 tbsp. ½ and ½ coffee cream
2 c. powdered sugar

Directions:

Cream butter and sugar until light and fluffy.
Beat in egg and vanilla.
Add dry ingredients alternating with sour cream and mix well.
It will be like very thick dough.
Stir in cashews.
Drop by tsp. onto greased cookie sheets (or parchment paper)
Bake 400º 10 min. Cool and frost.

Frosting
Brown the butter until it is light and foamy on top and granular on bottom.
Remove from heat. Add cream and vanilla.
Stir in powdered sugar and beat well until smooth.
Frost cookies and add more cream or sugar as needed.
Frost quickly and add a cashew on top.
