1 pork roast and 1 beef roast, 5 lbs total meat
1 large onion, sliced
2 packages onion soup mix
3 cups water

Brown meat on all sides in oil, seasoning with salt and pepper or seasoning salt. Put in roasting pan or dutch oven and cover with sliced onions. Sprinkle with soup mix and pour 3 cups water over all. Cover tightly and roast 3 hours at 325º.

Remove meat to platter to make gravy in roaster. Put ¾ cup flour and 1½ cup cold water into a jar; cover and shake until blended. Pour into juices in roaster, stirring constantly. Boil gently for 1-2 minutes.

Mom would dice up the leftover meat and add it to the leftover gravy . She'd heat this up, ladle it over 2 pieces of sandwich bread and call it Hot Beef Sandwiches. It wasn't until I moved away from home that I learned it was called "open face" sandwiches.
