choice of oil for baking dish (I like olive oil)
¾ cup part-skim ricotta
2 tablespoons grated parmesan cheese
zest of 1 lemon
1 small clove garlic (chopped or grated)
salt and pepper
1 cup frozen spinach, thawed and squeezed of excess moisture
1 cup artichoke hearts (canned and rinsed) chopped
flour for the surface
1 pound pizza dough (Publix has in bread department)
1 cup of mozzarella or italian mix shredded cheese


Directions:

1. Preheat oven to 475º.
2. Combine ricotta, parmesan cheese, lemon zest, garlic, pinch of salt, and ¼ teaspoon pepper.
3. Fold in the spinach and artichoke hearts.
4. Lightly flour a surface to shape the pizza dough into a large oval or round shape.
5. Place on the baking sheet and dollop (I prefer to say PLOP) with the spinach-artichoke mixture and spread it gently to leave a ½ inch border all the way around.
6. Sprinkle the cheese and bake until done (13-16 minutes).
