Makes 8 Large or 12 Medium

1½ cups all purpose flour
¾ teaspoon of kosher salt
3 extra large eggs - at room temperature
1 ¼ cups milk
1½ tablespoons warm, melted unsalted butter, plus extra for greasing pans

Oven 425º

Generously grease popover pans or Pyrex custard cups with some softened butter.

Put empty popover pans in oven for 2 minutes, to pre heat.

Using a wire whisk, Whisk flour, salt, eggs, milk and melted butter together until smooth.
Batter will be thin.
Fill the popover pans less than half full and bake for exactly 30 minutes. Do NOT Peek !!

These were almost always on our Christmas table when we had Beef. They make Kent smile !

Stir in the melted butter quickly
Use the bottom rack in oven,
Don't open the oven door to even peek !

If you are serving immediately, stick the tip of a knife inyto the tops to release steam- this prevents sogginess.
