Spanish Onions

Use sweet onions either Walla Walla Washington onions or Mayan onions as they are very sweet and are not as harsh as regular onions.

Cut 1-2 onions in half then chop the halved onions in slices. Set aside. Make the marinade:

½ cup water
¾ cup sugar
½ cup vinegar
Salt and pepper
Bring to the boil and pour over the onions; refrigerate overnight.

Drain the marinate. Add some mayo – a little at a time – and mix until creamy. Add some celery seed to add to the favor.
