2 cups cooked barley
16 oz can of black beans, rinsed and drained
2 cups corn, fresh or frozen, cooked
1 red bell pepper
1/2 cup onion, chopped
1/4 cup rice vinegar, or more to taste
1/4 cup cilantro, chopped
1 small jalapeno pepper, minced
1 Tbsp chili powder

Combine all ingredients, let sit for at least one hour before serving. Can be served at room temperature, or chilled.

This is a great Pot Luck recipe, since it can doesn't need any prep or heating before setting it out on the buffet. The flavor is even better the if you can make it a day ahead.
