1/2 cup vinegar
3 Tbsp. salt
15 cups pears
10 cups sugar
2 cups crushed pineapple
2 Tbsp. lemon juice

Directions:
Directions:
Peel and core the pears and place then in the vinegar and salt. Let marinate 5 minutes, then drain. Don't wash the fruit. Grind the pears using a course blade. Combine all ingredients. Cook until the mixture is thick and the pears become clear and glassy. Pour into hot sterilized jars and seal. This recipe makes 7 pints.
