Ingredients: 1 cup butter 1 cup sugar 1 cup confectioners' sugar 1 cup vegetable oil 2 eggs 1 tsp Almond extract 3 1/2 cups all purpose flour 1 cup whole wheat flour 1 tsp baking soda 1 tsp cream of tartar 1 tsp salt 2 cups chopped almonds 1 (6 oz. ) package English toffee bits Additional sugar for rolling dough

Directions:In a mixing bowl, cream together butter and sugars. Add eggs, oil and extract; mix well. Combine flours, baking soda, cream of tartar and salt; gradually add to the creamed mixture. Stir in almonds and toffee bits.
Shape dough into 1 inch balls, roll balls in sugar. Place balls on ungreased cookie sheets, flatten with a fork.
Bake at 350 degrees for 12-14 minutes, or until lightly browned. |

Notes: My friend Laurie graciously shared this recipe, and it has become my go to for bake sales or just to have on hand in the freezer to have fresh baked cookies in a jiffy.
To freeze, prepare the dough all the way to rolling in sugar and flattening with a fork. Once prepared, place unbaked cookies close together on a baking sheet and place the sheet uncovered in the freezer. Once frozen, cookies should be put in a zip lock freezer bag until needed. No need to thaw before baking, just add a minute or two to the cook time.
