cup fine cracker crumbs
cup grated parmesan cheese
1 tsp dried basil
salt and pepper
1 egg
2 tbsp lemon juice
4 to 6 chicken breasts, skinned and boned
1 tbsp butter
2 tbsp oil

Directions:
Directions:
Combine crumbs, cheese and seasonings in a shallow dish. Beat egg and lemon juice in shallow dish. Beat egg and lemon juice in shallow bowl. Dip each chicken piece in shallow bowl. Dip each chicken piece in beaten egg mixture, then in crumb mixture. Place on wax paper to dry for about hour. Heat butter and oil in frying pan over medium heat. Cook chicken until golden brown on both sides and springy to the touch, about 5 7 minutes per side. Serve immediately.
