Bacon Fried Rice Recipe

1 pound bacon - chopped and cooked
4 cups cooked rice
1/2 large white or yellow onion - diced
1 carrot - dice into small cubes
2 cloves garlic - minced
2 eggs
Red pepper flake - to taste
Garlic salt - to taste
2 - 3 tablespoons Soy sauce
2 tablespoons olive oil
2 tablespoons butter

Directions:

Cook bacon either in frying pan or in oven. I always use the oven and cook at 375º, then chop. Set aside for later.
Heat oil and batter in large skillet on medium heat. Add carrots and onion. Cook until onions are transparent. Add garlic.
Turn heat on high and add rice and bacon. Allow to cook together for a couple of minutes.
Crack eggs and whisk in small bowl. Clear a space in center of rice and add egg. Scramble then mix in with rice mix.
Add soy sauce, garlic salt, and red pepper to taste. Mix well.
Let cook until parts of rice get a little crispy, about 5 minutes.
Serve and enjoy!
