3 medium sized Zucchinis
1 lb Jimmy Dean Spicyt Frozen Pork Sausage
1 jar Chunky Salsa (I prefer "Hot", but "Mild" works as well)
1 cup Portabella Mushrooms
1 cup diced yellow onions
1 cup fresh cilantro - diced
Shredded Mozzarella cheese

Directions:
Directions:
Wash and cut Zucchini in half length-wise. Trim ends.

Place Zucchini in cake or glass pan. Fill bottom of pan with water and bake zucchini in over 350 until tender.

In a saucepan, cook pork sausage. Drain and replace into saucepan. Add onions and mushrooms. Heat until onions are tender. Add Salsa and Cilantro. Cook until heated.

Remove Zucchini from oven
Fill Zucchini boats with mixture.
Top with mozzarella cheese and return to over until cheese is melted
