2 cups frozen or canned whole kernal corn
2 cups milk
2 T melted butter
1/2 tsp salt
1 tsp sugar
3 eggs
1 T minced onion (optional)

Directions:
Directions:
Add corn, milk, butter, sugar, salt and onion to eggs, stir to combine well. Turn into a well-greased 1 1/2 qt casserole Place in pan of hot water; bake at 350º for 45 minutes or until pudding is set

1 1/2 cups mashed cooked carrots may be substituted for corn.
