We love to freeze squash. One year we froze 40 squash from the farm.
Freezing:
Cut squash in quarters. Scrape seeds out until clean. Slice peeling off. Rinse and cut in big pieces and put in a large kettle. Cook until a knife slides through easily like cooking potatoes. Drain and place in a big bowl to mash. Mash very well and add butter, brown sugar, salt and pepper.Cool until cold and place in plastic bags. When serving, you can add a little more butter.
