4 Tbs Olive Oil
1 sm Red Onion Chopped
4 cloves Garlic
Salt & Pepper to taste
2 cups of Cherry Tomatoes or a can of Chopped Tomatoes
1/2 tsp Crushed Red Pepper Flakes
1/2 tsp Paprika
1-1 1/2 lbs Jumbo Shrimp
1/2 of Feta and addition to serve
1 tsp Dried Oregano
2 Tbls Parsley

Orzo Pasta
1 qt. Boiling Water
1 1/3 cup of Orzo
2 Tbls Butter
1 1/2 tsp Lemon Zest
1 Tbls Lemon Juice
2 Tbls Fresh Parsley Minced

Preheat Oven 425º

Pasta
Bring 1 qt of water to a boil at salt and orzo. Cook until orzo is tender about 8 min and most of liquid is absorbed. Add Butter, Lemon Juice, Lemon Zest and Parsley. Set aside in serving dish....top with Parmesan when serving..

Toss shrimp w/chili flakes, paprika, 2 Tbls olive oil and set aside. Arrange cherry tomatoes, garlic, and onions on rimmed baking sheet. Drizzle w/remaining olive oil and toss. Season with salt and pepper. Arrange shrimp over tomatoes in one layer top with feta cheese. Roast for 15 - 20 mins until shrimp is done.

The orzo is light and fresh. Leftover pasta can be served cold as a salad...just add some chopped veggies and extra feta.
