Slovakian Apple Strudel Recipe

3 Cups Flour
1 Tbsp Sugar
1 Tbsp Salt
3 Tbsp Melted Butter
3 Tbsp Oil
1 Egg
3/4 Cup Warm Water

8 Apples peeled, cored, sliced VERY thin
3 Eggs separated ( yolks beaten, whites stiff)
1 Cup Raisins - soaked in warm water
1 Lemon - juiced and rind grated
1 1/2 Cups Sugar
1 1/2 Cups Butter
1 Tbsp Cinnamon
1 Tbsp Allspice

For pastry, mix all ingredients except the butter and knead for 15 minutes. Cover in warm pan for 1/2 hour. Put butter on pastry then put pastry on large floured pastry cloth(tablecloth sized). Start stretching pastry to the very edges of cloth. Stretch gently.! Stretch until dough is tissue thin. Be patient. Lay apples on strudel dough as first layer. Drizzle egg yolks on apples. Add lemon juice and rind. Add sugar evenly over apples. Cut butter into small cubes and place evenly over apples. Add spices and sprinkle raisins. Finally, drizzle egg whites on top. Trim off heavy edges of dough and carefully roll up to fit in a greased 13x9 pan. Bake at 350 for 40 minutes. Baste frequently with melted butter.
