3-5 lb Eye Round Roast
salt and pepper to taste
1/2 tsp of each
Dried mustard,
ground garlic
Paprika, &
Thyme

Directions:
Season meat with above seasons, night before is best. Let meat sit out for 30-1hr before putting in the oven.Preheat oven to 500 degree. Cook meat on high for 20 minutes until browned. Then reduce heat to 325. Cook for about 20 mins a pound for medium rare. Once removed from oven meat needs to sit for 15-20 minutes covered with foil. Meat will continue to cook and juices will settle, have patience it is worth it.
