Lazy Daisy Cake Recipe

2 eggs
1 cup sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
tsp salt
cup milk
1 tbsp butter

Topping: (*best doubled)
3 tbsp melted butter
5 tbsp brown sugar
2 tbsp cream
cup coconut

Beat eggs, sugar and vanilla until lemon coloured. Sift flour, baking powder and salt, add to egg mixture, mixing by hand until combined. Heat (to boiling) the milk and butter. Add all at once to first mixture, beating only until smooth. Bake at 350F for 30 minutes, in 8 X 8 greased pan.

To make topping, combine ingredients in a pan until melted. Spread on top of baked cake and brown under broiler, watching carefully that it doesn't burn.
