3T olive oil
1 1/2lb chicken breast cut into bite sized pieces....thighs work also
1 1/2 T Za'atar spice blend
1tsp salt

1 yellow onion, chopped
2tsp minced garlic
2c fresh spinach, chopped coarsely

1 3/4c chicken broth
1 1/2c dry orzo pasta
2T fresh oregano
2T fresh squeezed lemon juice
2-3 oz Feta

Directions:

Saute chicken pieces in olive oil. Sprinkle with Za'atar and set aside. Lightly sprinkle with salt.

Brown the onion till translucent. Toss in garlic and mix w/ onion. Lightly sauté chopped spinach till
wilted.

In large saucepan or covered skillet combine the above with Orzo pasta, broth, oregano and lemon
juice. Stir. Cover 10 minutes. Stir again. Cover again for 5-10 minutes till all broth is absorbed.

Sprinkle with Feta to serve.

I like to hold the spinach out until the last 10minutes. I put in on top everything at the end to wilt just before serving.

Delicious and hearty....little CLEAN UP...just one pan!!
