2½ cups flour
2 eggs
salt
1 cup water
1 tbsp oil

Directions:
Directions:
Prepare the dough by mixing the flour, eggs and salt together. While stirring, add a little water at a time until the dough is smooth but not too stiff. (If large eggs are used, then use less than the 1 cup of water). Continue to beat the dough until it rises. Cook the dough by first heating up a large pot full of salt water; add a tablespoon of oil.

Fill the grater with part of the dough and grate the noodle into the boiling water. Cook 2 to 3 minutes. Use a ladle to lift up the noodles when they float to the top and keep them warm while the remainder of the dough is cooked by the same method. Serve with butter or gravy.
