1 rack of ribs
¼ c. chopped scallions
6-8 slices fresh ginger
½ c. rice cooking wine

Directions:

Place chopped ribs in pot of cold water. Bring to boil. After 10-
15 minutes, scrape out impurities. Put in ginger, scallions, and
cooking wine. Boil for an additional hour and a half (med-high
heat). Serve on a bed of rice. Ribs should slide off the bone. Cook’s
Comment: Leftover ribs? Perfect! Save the broth, cook noodles in
the broth, stick the ribs back in for a few minutes to heat up, and
you have a delicious noodle soup with ribs to enjoy!
 

Dipping Sauce

¾ part light soy sauce
¼ part sesame oil

Mix sauce ingredients. Serve in individual containers for dipping.

This was a winter family favorite growing up in Beijing. Easy
to put together and I have fond memories watching the windows
fog up from the steam. I also cooked these ribs after proposing to
my wife, and they have now become a staple in our new home.
