2 c all purpose flour
1 tsp salt
3/4 c butter
1 egg yolk
1/4 c iced water
1 egg yolk beaten with 1 T water for glaze
poppy or sesame seeds

Filling
2 c shredded sharp cheddar (8 oz)
1 c finely chopped onions
1/2 tsp Italian seasonings
3 T mustard pickle relish

Directions:
Directions:
1. To make pastry, in a medium bowl, combine flour and salt. With a pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. In a small bowl, beat egg yolk and water until blended. Sprinkle over flour, toss with a fork until mixture holds together. Gather dough into a flattened ball. Wrap in plastic wrap. Refrigerate for 30 minutes.
2. Preheat oven to 400 F (205 C)
3. To make filling. In a medium bowl combine cheese, onions, Italian seasoning and pickle relish.
4. On a lightly floured surface roll out pastry to a 16" x 12" rectangle. Spread cheese mixture over pastry to within 1/2" of edges. Brush 1 long edge of pastry with egg glaze. Roll up jelly-roll style, starting from the long unglazed edge. Press seam to seal. Lift filled roll carefully. Place roll seam side down on greased baking sheet.
5.Cut roll at 1/2" intervals with scissors, cutting almost through to opposite side of roll. Shape roll into a ring. Brush ends with glaze, press firmly together to seal. Raise each cut section carefully. tilt back slightly to expose filling. Brush ring all over with the egg glaze. Sprinkle with poppy seeds.
6. Bake in preheated oven 30-35 min or until golden brown. Cool on a baking sheet for 10 min. Slide ring off the baking sheet carefully. Cool on rack. Serve warm.

This is very good, and a specialty of Joc's. You could also make as mini tarts with the filling to make a more easily served appetizer. Great for special entertaining.
